Stuffed Bell Peppers
My husband and I both loved this recipe! We each ate two of the stuffed peppers, and they were delicious! Doesn’t take too long to cook this up, just the choppin time, maybe 10 minute prep in the skillet and baking for 25 minutes. Hope you enjoy!

Stuffed Bell Peppers
Ingredients
- 4 Large Bell Peppers (We usually use yellow or orange peppers)
- 1lb Ground Beef
- 1 Large Onion
- 3 handfuls fresh spinach
- 1 garlic clove
- 1 bag Shredded 4 Italian Cheeses
- 1 handful Fresh Cilantro (We have a fresh cilantro plant in our kitchen, so I pulled off some leaves and threw it in)
- 2 tablespoons Gluten Free Taco Seasoning
Directions
Step 1 | Preheat oven to 350 degrees |
Step 2 | Put 1lb of ground beef into skillet to cook on Medium heat. Add the 2 tbsp of gluten free taco seasoning. Mix together and start to brown the beef. |
Step 3 | Dice onion and garlic. Add onion, garlic and a handful of fresh cilantro to the skillet. |
Step 4 | Take 1 bag of Shredded 4 Italian Cheeses and slowly stir into the mixture until fully melted and mixed in. |
Step 5 | The beef should be fully browned at this time. Grab 3 large handfuls of fresh spinach and add them to the skillet. The juices already in the skillet will sauté the spinach. |
Step 6 | Lower the skillet temperature to a simmer. Take the 4 bell peppers and cut off just the tops of them and clean out the insides to make 4 bowls. Place the peppers on a cookie sheet and with a spoon fill all four peppers with the beef mixture. Place the cookie sheet into the oven, and let them bake for 25 minutes. |
Step 7 | Enjoy! Careful, they come out extremely hot with lots of juices! |
